Pears Poached in Red Wine Syrup

This is a delicious, fragrant Italian dessert that is easy to have cooking away in the background while you do other things. Serve at room temperature with cream.

Preparation time: 10 minutes
Cooking Time: 1 Hour

10 pears
2 large strips of orange rind
1 large stick of cinnamon
1 cup red wine
1 cup white sugar
1 cup water

Peel pears but leave stems intact.
Place the sugar, water and wine in a large saucepan and bring to the simmer, stirring until the sugar is dissolved. Add cinnamon and orange rind.
Add pears and simmer on low heat for 1 hour or until tender.
Lift pears out and arrange on a serving dish. Remove cinnamon and orange rind from the pan and discard, then boil the red wine mixture to reduce it down to a thick syrup and pour over the pears. Allow to cool to room temperature.
