Tuna and Kale Pastry

These tasty pastries are great as a simple midweek dinner but can present well enough to serve at a dinner party. They can also be made with silverbeet or spinach. My parents used to sell them in their cafe when I was a kid and I'm fairly sure nobody could tell how easy they were to make! They freeze very well, and make a tasty, portable lunch, particularly with homemade tomato chutney or tomato sauce. Shaping of the pastries is up to you - I have shown steps for how I do it, but if you are in a hurry it is fine to just fill the middle of a square of puff pastry and fold it over to make a big triangle, or if you have school-age helpers around, they might really enjoy getting creative with different pastry shapes.
Serves 4
Preparation time: 15 minutes
Cooking time: 10 - 15 minutes

6 large kale leaves, washed, stems removed, and shredded (250g approximately)
1 medium onion, finely chopped
2 tblsp mayonnaise
425g tuna in springwater, very well drained
Black pepper to taste
4 sheets puff pastry

Coarsely shred kale leaves in a blender or finely shred with a knife. Place in a bowl, cover, and microwave for 6 minutes, stirring twice.
Stir through onion, mayonnaise, tuna and black pepper. Break up any large chunks of tuna.
Make into parcels using puff pastry.

Bake on greased oven trays until golden (10-15 mins). 


Serve with chutney or tomato sauce.
